I love Austrian cuisine! Especially the classic pastries like Kaiserschmarrn, yeast dumplings or apricot dumplings. Here comes a simple, quick and delicious recipe for vegan poppy seed noodles.
Dessert: potato noodles with poppy seeds
Poppy seed noodles are an Austrian and Bohemian dish. Similar to the Swabian Schupfnudeln, they are made from potato dough.
However, melted margarine (in the purely vegetable version), poppy seeds and powdered sugar are added at the end.
Vegan dessert or main course
Depending on your appetite and preference, you can serve the poppy seed noodles as dessert, for lunch or for dinner.

Make poppy seed noodles yourself
The original recipe for the Waldviertel poppy seed noodles comes from Pollak’s Wirtshaus – Der Retzbacherhof, which was awarded a toque by the Gault-Millau restaurant guide.
I have veganized it: it does not require any egg or butter, I have replaced these two ingredients with applesauce and vegan margarine.
I didn’t get the typical Waldviertel gray poppy here, so there is blue poppy with it.
You cook the potatoes one day, the next day you prepare the dish. The recipe is easy, quick and the result is so delicious.
Vegan recipe for poppy seed noodles
2 servings as main course, 4 servings as dessert
Ingredients for the poppy seed noodles
250 g floury potatoes
125 g of flour
15 g vegan margarine
1 pinch of salt
40 g applesauce
50 g vegan margarine
20 g of sugar
5 g vanilla sugar
1 shot of rum
40 g poppy seeds
if necessary applesauce or plum compote
Wash the potatoes and cook until soft in around 20 minutes. After cooling, place in the refrigerator.
The next day, peel and mash finely with a potato masher or fork.
Knead into a dough with the flour, margarine, salt and applesauce.
Shape it into a roll on the floured work surface. Cut into 20 to 24 equal pieces. Use this to make the noodles.
The poppy seed noodles should be thicker in the middle and thinner at both ends. You can do this by rolling the pasta with one hand and applying more pressure with your thumb and little finger.
Let it cook for around 10 minutes. Then drain the pasta.
Melt the margarine, then add the sugar, vanilla sugar, rum and poppy seeds. Finally, swirl the noodles in it.
Arrange on plates and sprinkle with powdered sugar.
I also like applesauce or plum compote with it.
